“Rocket Pig”

Ralf Kuettel, the chef and owner of Trestle on Tenth, is known among many for his way with pig. He serves an annual metzgate (loosely translated as “a butcher’s affair” for the traditional Swiss celebration of the pig), as well as a yearly pig roast party for the industry. Now he’s opening up a new shop, Rocket Pig, which demonstrates what he can do with pig when it’s served in sandwich form.

 

At his little piggy shop, he’s featuring one and only sandwich--The Rocket Pig--made from a juniper, mustard, and bay-leaf brined, spice rubbed and smoked piece of pork (heritage breed, shoulder and neck). It's piled onto a ciabatta roll with mustard aioli and red onion jam. At $14, it comes with house-made pickles and house-made hot sauce. You can have the sandwich at one of the shop’s counter seats or take it to Trestle and Tenth's leafy garden and add on oysters, charcuterie, and wine and beer.
