“Required Eating: French Onion Soup”
I don’t know about you, but I am a huge fan of French Onion Soup. While it’s totally old school and hardly trendy (it originated in 17th century France), it’s a dish I often crave, especially now when the weather’s getting cold and I’m searching for something that will keep me warm and fill me up: this is a soup that eats like a meal. The broth is rich with the caramel sweetness of slow-cooked onions and loaded up with softened slices of baguette, and when you top that off with gobs of bubbly gratinéed Gruyere (Swiss or Fontina, too) and add a glass of red wine, there’s really nothing better on a cold fall afternoon.

And the honorable mention goes to the French Onion Soup styled roasted tomato soup at The Smith (55 Third Avenue, between 10th and 11th Streets, 212-420-9800). What you’ll get is a tomato soup that’s thick, rich and velvety smooth, capped with a crusty slice of bread and a bubbly blanket of cheddar cheese. No onions, but oh so good.

I am a lover of French Onion Soup and have sampled many varieties in the restaurants of NYC. Pastis is the best I have ever had. the broth is incredible with a touch of wine or sherry in it. There is the perfect amount of onions and the cheese is always cooked to a beautiful golden crisp over the yummy soggy piece of bread. Run, don't walk to Pastis for this treat.
