“Crazy for Cassoulet?”

It feels like food, especially this winter, is the only good thing in between the chilly temps and messy, slippery sidewalks. As the weather creeps toward spring, though, there’s a perfect dish to savor before you’ll want to ditch hearty foods: cassoulet. Savoy in SoHo will celebrate the classic dish of southwest France beginning February 18th with an $85 three-course meal (with wine) hosted by Adam Gopnik of the New Yorker.

The February 18th dinner kicks off a nearly month-long regional homage to the dish, which will be served during lunch ($25) and dinner ($35) until mid-March. 

The Cassoulet de Toulouse (cooked in confit of goose) is available February 19 to March 2 and the Cassoulet de Carcassone (includes braised lamb shoulder and pork belly) between March 3 and 15. All of this ends with a cassoulet feast on March 14 from 12:30 to 3:30 p.m. ($55, including wine). Chefs, including Carolina Fidanza of Marlow and Sons, Joel Hough and Marc Meyer of Cookshop, Jimmy Carbone of Jimmy’s 43, Matt Weingarten of Inside Park and Galen Zamarra of Mas, will make their own versions of cassoulet.
