“A Twist on Soup & Sandwich: Pho Sure Opens Inside the Latest Baoguette”

While some restaurateurs may be tightening their belts, cutting back and closing locations, that's not the case for Michael “Bao” Huynh and his wife Thao Nguyen. The pair have been on a roll of late, opening two successful Baoguette locations (serving fresh overstuffed bahn mi – baguettes with pork terrine, pate, pulled pork, and fresh herbs), and they've just opened a third Baoguette shop, this time in the West Village, that includes a noodle shop -- called Pho Sure -- in the back room.

Featuring dark wooden booths to seat 25, the biggest decorative flourish is the array of exotic add-ons you can choose from in garnishing your bowl of Vietnamese noodles and broth. Pho Sure serves the traditional version with rare beef, brisket, and shin ($8), a spicy beef belly version ($8) and tons of optional add-ons to decorate your big bowl, such as bone marrow ($7), beef tripe ($4), tendon ($4) or a perfectly poached egg ($3). There are also add-ons for the truly pho-curious, like hen caviar (an unhatched chicken egg that’s basically all yolk) for $5, and beef peen (this means what you think it means) for $8. Each option deploys different flavors, textures, and richness. Sounds intriguing. For sure.

“Best Pho in NYC and Best Banh mi in NYC”

I'm Vietnamese. I've grown up eating Viet food & have eaten in Vietnam. This place has, in my opinion, the best pho in NY. It's hearty and comforting. The ingredients are fresh. It reminds me of how my grandma used to make it but probably even better because of the superior ingredients (Sorry ba noi!). The other dishes there also pleasantly surprised me. Vietnamese food w/ a modern twist while still remaining completely authentic. The beef tongue was exceptional. Banh mi are great!
