“The Wallace Opens in Clinton Hill”

The Wallace, a new Contemporary  American eatery , opens tonight in Brooklyn's Clinton Hill.  Soon to be husband and wife team, Chef Jon Wallace (previously of Thistle Hill Tavern and Buttermilk Channel) and his fiancée Jessica Soule (who worked front of house at Zoe and Chubo), are paying tribute to the diverse American culture and cuisine found in the multi-faceted borough of Brooklyn, while saluting all  things local and home-made (almost everything, from the cheese to the sausage to the jams to the buns is made at the restaurant).

The menu includes "Housemade Flatbreads" with house made ricotta,  grilled, marinated radicchio, crushed red pepper, and runny egg, Oysters Oregenata: oregano- infused aioli, and bread crumbs, Housemade Buratta Salad: savory peach puree, endive,  parsley, peach vinaigrette, and crispy herbs, Duck Breast:  fingerling potatoes, baby turnips, shaved brussel sprouts, and duck demi glaze, The Wallace Burger: house ground short rib & tongue burger, on a house made whole wheat roll, picked jalapeño, blue cheese, with cheese smothered broccoli, Butternut Squash Risotto: mascarpone, pecorino romano, and balsamic reduction, and Braised Oxtails: creamy polenta, toasted breadcrumbs, and crispy garlic.
