“Dorie Greenspan's Beurre & Sel Opens Tuesday”

Four-time James Beard Award winner and New York Times best-selling author Dorie Greenspan, her son Josh Greenspan, and their business partner Daniel Seehoff, will open Beurre & Sel, a new cookie company, on Tuesday September 18th in two locations: the Essex Street Market on the Lower East Side and in East Harlem's La Marqueta.

 

 

"For years, I've loved creating cookie recipes in my home kitchen, collaborating with some of the world's greatest chefs (including Julia Child and Daniel Boulud), and baking cookies virtually with home cooks through my blog," said Dorie. "And so I'm really excited that, thanks to Josh (aka "The Kid") and our great partner Dan, we'll (finally) have a real roof over our heads -- actually two roofs."

 

 

The company's name derives from two of Dorie's favorite ingredients -- butter and salt --and indeed all Beurre & Sel cookies, whether sweet or savory, are baked with local butter and hand-harvested French sea salt.

 

 

The "Classics" line features sweet cookies baked in rings and sold individually as 3-inch cookies or in "stacks" of seven to twelve 2-inch round cookies. Classics include French-Vanilla Sablés, World Peace Cookies (inspired by Pierre Hermé, Dorie's co-author on two books), and "Jammers" (vanilla sablés topped with French jam and a circle of sweet streusel), a new signature cookie for Dorie. The "Cocktail Collection" is a selection of savory cookies, meant to be enjoyed with wine and cocktails, that are baked into 1 ½-inch bite-size rounds and sold in stacks of about 15 cookies.

 

 

All Beurre & Sel cookie production takes place at the La Marqueta location, and is overseen by pastry chef Marisa Croce. Prices range from $2.00-4.00 for individual cookies, and $10.00-14.00 for stacks of cookies.
