“Making Perfect Latkes”

When my brother and I hosted a Hanukkah Party last year at his place in San Francisco, we made two kinds of latkes—sweet potato and regular and both were a hit. We made enough latkes to feed an army of Macabees and somehow they were all eaten up. (People must like fried potatoes!) We used Joan Nathan’s simple recipes that call for little more than the potato in question, onion, a bit of greenery for color, salt, egg, and hot oil for frying and that is it.

If you’re planning on latkes this Hanukkah (and why not?) here’s a great video from Tablet magazine that Joan Nathan did that should help keep your latkes golden brown, crisp and delicious. Also, for a bit of variety, try Melissa Clark's recipe for apple-potato pancakes.
