“Pearl and Ash Opens on the Bowery”

The Bowery, once synonymous with restaurant supplies and methadone clinics, is now a destination for modern cuisine.  The newest kid on the Bowery block is Pearl & Ash, an restaurant from Chef Richard Kuo with an international menu featuring ingredients that frankly sound kind of sexy.

Kuo, formally of Corton and Frej, breaks down his menu with six simple categories: Raw, Small, Fish, Meat, Vegetables and Sugar.  Market driven dishes like Ama-ebi (Sweet shrimp) with smoked lime yogurt, diver scallops with fennel, lily bulbs, and berbere scream early spring while mackerel with potato salad and salted cucumbers, mussels pan roast with hen of the woods and pumpernickel and veal check with forbidden rice keeps diners firmly routed in the winter season.

As far as I’m concerned, Long Beans with Chili and Uni are welcome winter, spring, summer or fall.

While you’re sitting under a natural wood mosaic at the 62-seat space created by Sway Design, you can sip from the eclectic wine list selected by Sommelier Patrick Cappiollo (Gilt).

If you like to mix your drinking with a history lesson, take a look at the cocktail list created by former chemist Eben Klemm.  Relive New York moments with drinks inspired by the Bowery’s past.  No need for a time machine to check out Murder on the Ebulliant Express with white port, Cocchi Americano, Bonal and celery-lime juice or celebrate Basquiat with a Radiant Child (Amontillado Sherry, Zucca, falernum, lemon, bitters and egg yolk)
