“Dogmatic Sausage Systems to open Monday”

Last August I wrote about a new hot dog cart on Bleecker Street run by former Employees Only chef Jeremy Spector. He had created his own recipe of all-natural dogs served inside a European-style baguette with homemade sauces. Now he’s little cart is all grown up.

With the help Blum Enterprises (a restaurant company run by Brad Blum, former CEO of Burger King and Vice Chairman of Darden Restaurants respectively, that develops and operates new restaurant brands) he has opened a full-fledged restaurant called Dogmatic Sausage Systems (sounds like something from Lars Von Trier to me), which will open on Monday at 26 East 17th Street.

Jeremy's menu features grilled-to-order handcrafted sausages ($4.50 each in grass-fed beef, free-range chicken, pork, turkey and lamb), which contain no hormones, no antibiotics, no nitrates, no artificial flavors or colors and are naturally low in fat. (Vegetarians can feast on asparagus spears).

The sausages (or spears) are tucked inside hollowed out baguettes by Pain D’Avignon and then skewered on a spike and cooked from the inside out and slathered with your choice of sauces like cheddar jalapeño, truffle Gruyere and sun-dried tomato feta, or yogurt mint, plus, there’s always Dijon mustard or ketchup.

To drink, there’s a line of handmade sodas (coconut, grape, strawberry, ginger, lemon/lime), made from reduced fresh fruit purees and syrups mixed with ice and carbonated water, as well as seasonal treats such as sorbet and ice cream made fresh on premise and changed daily. The restaurant has a light and airy feel with an open kitchen, and room for 20 at a communal butcher-block table.

What is so spec. about GT and SS that makes you like them and not Dogmatic? Don't get me wrong, I was at GT last Fri & at SS this past weekend, but for you to publicly roast a Dog. on its 1st day and not have any sort of cred is like if I came into your cubicle on your 1st day of work and told you that your spreadsheets SUCK. Appreciate the difficulty of starting a great concept, are you really going to do a better job than the Chef of Empl. Only and a VP at BK? Get back to your excel.

“not all that....”

dry sausage stuffed in a baguette....yawn. Not that innovative and looks like more time spent on store design than on a new menu. $1.50 for a bag of salty tortilla chips also not interesting. Tasty ginger soda drink. Sauces were ok -- tried the cheddar jalepeno -- but would have liked the ability to slather more of it on the sausage but couldn't because it was basically sealed in the bread hole. Not an improvement over Mandler's....bring back the corn fritters.
